Seared Broccoli Stalk over whipped feta + olive salad

Makes 6 servings  |  Time: 45 minutes


THE INGREDIENTS


The Broccoli 

  • 6x broccoli stalks, peeled & halved.
  • 1 tbsp olive oil 
  • 1 cup Vegetable or Chicken stock 
  • Salt & Pepper

Whipped Feta 

  • 300 Grams Cream Cheese 
  • 300 Grams Feta 
  • 1 lemon 
  • 3 tbsp olive oil 
  • Salt & Pepper 

Olive Salad 

  • 200-300 Grams of Black and/or Green Olives 
  • Half a cucumber 
  • 50 grams pearl onions 
  • Small handful Parsley 
  • 1-2 tbsp olive oil  
  • Salt & Pepper 

HOW TO

  1. Get a searing pan and put it on high heat with the olive oil
  2. Take your peeled/halved Broccoli and sear them till brown on all sides 
  3. Bring the heat down to low & add in you stock, salt and pepper.
  4. Cover with a lid and cook till tender 
  5. While cooking, add in the food processor all of the ingredients for the whipped feta and pulse. 
  6. If it’s not creamly enough, slowly add in some more olive oil and/or water if you think it’s getting too oily.
  7. Once done, keep it there! 
  8. Take out the ingredients from the Olive Salad and chop finely. 
  9. Add in the olive oil, salt & pepper and mix. 
  10. Take out your plates and put the whipped feta on the bottom
  11.  Add your broccoli stalks over it.  (2 half stalks  per plate)
  12. Add your olive salad on top
  13. Serve!
