A taste of Autumn at Vessel

This autumn, seafood features prominently, mushrooms return to the menu and popular lunch dishes get a fresh twist. Each addition reflects the individual tastes and ideas of the chefs behind it, giving the menu a personality of its own.

Some dishes begin with careful planning, while others start with a sudden flash of inspiration. The new duck tataki falls into the latter category. Sous chef Dimitri arrived with the idea after waking up one morning with the dish in mind. For chef de partie Stein, inspiration came from a broader idea: that Vessel should embrace its connection to the water. His grilled octopus brings fish and seafood into the spotlight, reflecting his own culinary perspective through a combination of flavours and thoughtful presentation.

Together, these dishes capture the spirit of the new menu: individual ideas, shared enthusiasm and a willingness to try something different.

Vessel’s sandwiches continue to be a highlight, with familiar comfort food meeting a few unexpected twists. The steak sandwich combines good steak, caramelised onions, freshly baked Spanish bread and plenty of cheese. Simple, generous and full of flavour, it has become a lunchtime favourite. Throughout the summer, it came close to overtaking Vessel’s much-loved Caesar salad as the restaurant’s best-selling lunch dish, outselling it on several occasions.

The autumn menu also sees the kitchen explore new territory with its first sandwich inspired by a signature of Indian cuisine. The team’s shared love of curry inspired the butter chicken sandwich, bringing bold, familiar flavours into a new format. Meanwhile, the pulled salmon sandwich began with a simple question: how could the kitchen bring the appeal of a pulled pork slider to the menu while adding another fish dish? The answer was to take the idea of pulled meat and give it a seafood-led twist.

From an established favourite to two more experimental additions, the sandwiches reflect the kitchen’s appetite for both comfort and creativity.

Miso mushroom pasta: A seasonal favourite

As Autumn settles in, mushrooms return to their seasonal best. Rather than taking the familiar route of adding them to a cream sauce, the Vessel team wanted to focus on what makes mushrooms so appealing: their deep, savoury umami flavour. The result is a miso mushroom pasta that builds on that richness with miso, mirin, gochujang and Parmesan. Tossed with al dente pasta and finished with spring onion and ginger dressing, it brings together layers of savoury depth, warmth and freshness. It’s a comforting dish with an unexpected flavour profile, making it a natural fit for cooler days and evenings. For mushroom lovers and anyone looking for seasonal dining in Amsterdam, it’s one of the standout additions to the menu.

A favourite returns

Rounding off the menu is the return of Vessel’s deconstructed cheesecake. Previously available for three months, it was taken off during the summer as the team focused on dishes that could be prepared more efficiently at higher volumes.

Now, with the season changing, it’s back for another outing. Its return reflects the balance at the heart of a good seasonal menu: making room for new ideas while bringing back dishes worth enjoying again.

From duck tataki and grilled octopus to creative sandwiches, seasonal mushroom pasta and the return of a much-loved dessert, Vessel’s autumn menu brings together the ideas and personalities of the team behind it.
